Large pinch grounded jeera and red chilli
2 tbsp olive oil
2tbsp brown sugar
1 cup diced Yam *1 steamed
1 ripe papaya*2
Rind and juice of 2 lemons
½ chilli, deseeded and chopped
20g dhania patta finely chopped.
Preheat the grill in a small bowl, mix together jeers, chilli powder olive oil and half the brown sugar. Put the yam onto a non stick baking sheet then brush the spiced over
Grill yam for 5 mints on each side basting once or twice with juices
Cut each papaya in half, diced and peel. Chop half the flesh and put into a bowl, puree remixing fruit with lime juice add to bowl with lemon rind chilli, dhania patta and remaining sugar spoon on top of yam and serve.
- 1. Yam can be substituted with red pumpkin.
- 2. Papaya can be replaced with ripe mango.
