1 cup thick avalakki.(beaten rice)
¼ cup grated coconut
1 onion finely diced.
3 green chillies
½ green peas.-cooked.
Bunch of coriander
A stalk of Kharipatta
Salt to taste.
Oil, mustard, urad dal, red chilli asafoetida for seasoning.
2 tsp. Lemon juice.
Method:
Wash the avalakki (beaten rice) keep aside to drain.
Make a dry mixture of coconut and coriander leaves. I usually give it a spin in the mixer.
Heat a wok, add in the oil (I use about 2 tsp.)
Mustard, urad dhal, red chilli, asafoetida and kharipatta in the same order.
Add in the diced onion sauté till it just begins to brown
Add in green chillies slit lengthwise
Add in the cooked peas sauté for a minute.
Add the coconut – coriander mixture sauté
Add in salt,(some people do add a pinch of sugar at this stage and turmeric)
Add in the beaten rice, toss it lightly until the rice and seasoning is well mixed.sprinkle water turn off the flame.
This can be served after 5mnts.
