• 250 gms Bendekai,(Bhindi, okra, ladies fingers)
• 2 tbsp. oil (I prefer coconut oil)
• 1tbs. pickle masala
• 1 tbsp. sugar
• 1 tbsp. sour curd.
• 2 tbsp. fresh coconut scraped.
• 1 ½ tsp. mustard seeds
• 1 tsp. urad dal
• 1 red chilli
• 4 bay leaves
• Pinch of hing.
• Salt to taste.
Warm a wok(kadai) and pour oil into it.
Add the mustard, urad dal,red chilli, hing and bay leaves.
When the mustard spurts add in the Bendekai. Sauté for 2-3mnts.
Add in the pickle masala, sugar, salt and curd and fold till all the Bendekai is coated with masala. Let this cook without closing it.
When cooked take off the flame and fold in the scraped coconut.
Goes well with roti’s and rice.
PS microwave the cut bendekai for 2-3mnts in the microwave, it does not get sticky.
