An apple a day keeps the doctor away and if the doctor is handsome keep the apple away.

With lot of apples in house, apple jam is a handy thing to make. It can be used to spruce up boring milk, used as a filler for pies. Eaten with bread or roti, or simple eaten as a dessert.
It is one of the easiest jams to makes and uses no preservatives.
Proportions are very simple
2 cups chopped apple. Since I have senior citizens at home, I puree it.
1 cup sugar
1 tsp cinnamon powder
1 tsp. lemon juice.
Since I kind of like the dash of spice in my jam I tend to add either grated ginger or a coarsely pounded pepper.
In a heavy bottom pan or a non-stick vessel, heat the sugar, to this add the cinnamon, and if you are adding spices add it too.
Add in the pureed apple and turn the flame on low. Let the mixture thickening keep stirring so that the mixture does not stick to the bottom. It takes about 20 -25mnts to thicken turn and flame off and let cool.
Add the lemon juice once the mixture has cooled. Store it in air tight jar. It keeps for about 3-4 months if refrigerated.
