Pumpkin Parata

Pumpkin parate (kaddhu ke parate)

Ingredients:

2 cups wheat flour

1 cup steamed and mashed pumpkin

1-2 tsp. chilli powder

½ tsp. garam masala

1tsp. oma

1 boiled potato mashed

Oil or ghee for the roasting

Method:

 Mix all the ingredients to form a pliable dough. I use my kneader to do it. the order is the same as listed.

Onions are optional.

Divide the dough into comfortable portions and roll them lightly.

Heat the skillet and roast the roti until bubbles appear on top. While the roasting is happening twirl the roti with a damp cloth at the edge so that it actually softens. Turn it over and roast till golden brown.

This is served hot with pickle and curd.
